Leaving tankless coil inside oil fired boiler

This may have come up before, but i need detailed clarification. I currently have an oil fired boiler with a domestic hot water coil. I want to get off the boiler for my hot water and replace it with an electric water heater. I have read that i can leave the coil in the boiler, but do i just cut the inlet & outlet pipes and leave the coil as is,leaving the pipes with holes in them, or is there something i am missing. i know i have to deal with the aquastat, but what else am i missing?? In addition i have read some people say let the boiler still fire in the summer at least once a day. is this necessary?? any help is appreciated.
