I have read there may be an issue with a "cold start". Not sure what that is but i assume it is when the boiler has been shut down for a while and goes completely cold.

+++ All boilers without a coil, including the one you have when a coil isn't installed cold start. Not a problem.

There is no way you will get more hot water from a 40 gallon electric tank than from a tankless coil boiler. They are usually at least 125,000 input which makes 2 gpm which is 120 gallons per hour.

If you aren't getting that, then the boiler is set up wrong and can be improved.
