As you state your boiler is larger than necessary for the heat, prioritizing the oversize would just short-cycle the boiler on priority, putting 120,000 btuh into a 70,000 btuh exchanger. You also said you don't need much more hot water, so you don't have to make 3 gallons of water every time the tap is drawn; the idea of an indirect is to have a quantity of water in the tank so the boiler doesn't have to fire every time like an instantaneous heater. You can add the priority control to feel good, but not make a benefit.
