So are you saying that if we remove burners we could re-space them so there isn't uneven heating?

+++ You will notice from the post that is NOT said, so you are saying that, which is incorrect. There is no way to respace existing holes.

However, by removing sections, you have less passages.

Is this a relatively easy task for a technician, or maybe not due to the 35 year age of the unit?

+++ If it was in brand new condition, you are still confronted by the need to assess the capabilities of any tech. Anyone who has repaired sectional boilers would have a good chance of doing it, when so inclined.
