Steam systems were invented before the on-off of gas and oil fuels. Provided the input at low fire is sufficient to continue to charge the entire system with steam, a long steaming time is more what the inventors of the steam systems had in mind with solid fuel.

Getting a close-range-acting new thermostat can cause problems with your intent to have a long cycle with the new gas valve and pressures. Room drafts can cause the burner to stop firing, then go on again against your intent.
