Yes, two ports for each is better than one restriction. A 2x2 hole is 3 sq inches. One 3/4 hole is half a square inch and a 1-inch hole is 3/4 of a square inch. So using a 1 and a 3/4 tapping is 1.25 sq inches in and the same again out. Two holes together is half a 2-inch hole, which is better than 1/4 that hole.

That is why I said I preferred the boiler manufacturer's tank with the 2-inch taps.
