Adding an elec. WH will give you a buffer zone to store HW. I feel this just masks the problem. I don't think the elect. will recover fast enough if you're using a lot of HW. If your boiler has plenty of BTU's, get an indirect tank fed by a HW zone of the boiler. get rid of the tankless coil as it's probably scaled up. Get some boiler controls to give priority to the indirect over the heating zones and lower the temp range of the boiler to save fuel.
