cold radiators and hammering

I have 75 year old house with steam heat, cast iron radiators, and newer Weil McLain oil powered boiler. Problems:
1)Two of my downstairs radiators are very slow to heat up and when the steam finally reaches the risers to the radiators, I get a very loud hammering. The hammering has happened with the supply valves fully opened and fully closed. The bottom of the radiator was warm when the valves were closed, so I am thinking that they broke and are stuck partially open? Thoughts?
2)The steam is very slow to go up one of these horizontal runouts. I removed the steam vent from the radiator to try to pull the steam through quicker and water came spewing out. I am guessing this is not supposed to happen.
Please help.
