You're in a fairly temperate climate, but be aware that a foot of masonry is about R1 (one inch of wood). You may want to line the rooms that you're not very active in if the fuel bills are too high you would lose a lot of equity in these times. I would put in a split AC with rotary compressors. You can start at sanyo.com, burnham.com. The compressor noise is outside. You can get a two or three evaporator models to do the master bedroom and living areas. Where I live there isn't a great need for cooling. If you need the whole house done and are going hydronic, look at burnham(.com)'s Duo-Rad units. They are convector units with fans. Circulating cold water in the summer, hot in winter. The other option is ductwork to get every room. There is a website on small diameter, high velocity ducts that can be hidden better (spacepak?)..
