Boiler Firing

I'm not sure if my hot water/radiant heat system is working properly. My Neighbor tells me his boiler is set up to keep the water at a certain temperature which is set at the boiler and the Wall Thermostat controls the operation of the circulation pump which circulates the water as heat is needed. On my system, the wall thermostat fires both the boiler and circulator pump at the same time when heat is needed. Typically, the boiler fires about once an hour depending on outside temperature and will run for about twenty five minutes. The water temp reaches about 160 degrees but will return to room temperature before the next cycle. Is this right? also which is the purpose of a gravity valve. I have one on my system. What does it do and should it be open or closed? Where can I find information about my boiler it's made by vaillant I can't find any info. Thanks in advance for your help.
