There's a possible danger to removing an old tankless coil, as the bolts that hold it may break, requiring chancy bolt drill repair that may leave another leak. The coil can be plugged at the cold water and hot water outlet without problems after removing connecting piping or tubing.

Chances are that the tankless coil control Honeywell L4006A2015 can simply have the wires or the control taken off, as it's purpose is to fire the burner when the boiler cools. The other control in the front should be high limit to prevent the boiler from overheat, so can remain. Best that can be known without the wire diagram.
