Tankless Hot Water Heater Problem

I recently purchased a Bosch Tankless Pro for my home. We really enjoy it, especially with 4 of us in the house!

The only problem I have is while taking a shower, especially in the summertime, the water heats up too much. I have a, what I call, a standard shower faucet with anti-scald. What is happening is I have to turn the faucet down to the point where it actually appears that I'm not calling for any hot water for the heater to be on and it shuts itself down creating a REALLY cold shower, until it recovers.

If I turn the bathroom sink hot water on while I take a shower, the call for hot water to the sink keeps the heater going and I can shower as normal. Any suggestions on resolving this?

Thanks!
