It is a simple task to check the adequacy of installation by comparing the installation and operation instructions that come in the box with the appliance to the actual installation. The local code official will usually recognize that as code, while some of the local codes may differ, although differences from venting instructions are rarely superseded. There are stainless flexible gas lines in use.
The engineering estimates you ask to guess about, such as CO (there should be hardly any) are only verifiable as a laboratory style test.
