Peerless ECT-04, trouble sustaining hot water

We recently purchased a house with a Peerless ECT-04 with a tankless coil for heating hot water. I'm still learning the system but am confused by the following:

We have no problem taking showers. The hot water seems sustained and lasts as long as we ask it to. It could be a bit hotter on the high end, but it's definitely acceptable.

However, my wife wanted to take a bath and we cannot seem to get the hot water to last while trying to fill the tub. I'm wondering if this could be some sort of volume issue. Does the system automatically govern the output of hot water? Would there be a reason that the system would kick more cold water into the line if the output rate is too high? and if so is there a way to adjust this?

Any input is much appreciated...
