I have dug through the forum and have a question I hope you folks could answer. more than one suggestion welcome :)

I have industrial/ commercial kitchen appliances (60 gallon soup cauldrons) that I would like to use for large scale canning operations from the home (basement). The appliance calls for steam source 40psi at 276 degrees farenheit.

I would like to use an external wood heat source to fire these appliances and it will be on an intermittant (once weekly in late summer and fall, then not at all during the winter) basis.

Not that it is related, but I have large tempering tanks for hot water to heat my radiant floor heat, and could potentially run excess heat into this kind of heat sink.
