I would look at it from the standpoint of
when the unit is not calling for heat or hot
water, is it on?
Probably not.
So what you are proposing is to keep it off
for a longer time (months).
The risk is a real cold freeze, which may affect
water in the pipes.
Also if there is a clock, it will loose the correct time.
I would also turn off the gas.
For restart you need to follow instructions,
like pilot light if it has one.
