Whenever the pressure of the hot water dropped so it was insufficient.

+++ No. Leave it in there. Trying to take the old coil out can sometimes mean a new boiler is required as the bolts fail.

: should a new tank be wrapped in insulation to prevent losses?

A new indirect tank is already well-insulated; but adding more instulation makes it that much better.
