Easy question. Use the fittings recommended by the manufacturer of the PEX. the PEX isn't warranteed for use with any other fitting and there is no recourse from using what you imagine you could use over what is required. A type of tubing was under recall for a decade because installers in the south used screw clamps instead of the recommended fittings, so manufacturers are very careful not to allow inventions by do-it-yourself non-engineers to bring them to court.
