how to choose a thermostat: hot water radiator system

I recently purchased a 1928 house with a hot water boiler and radiator heating system. The thermostat needs to be replaced and upgraded. When I look in the paper, the various advertisements often mention that they are well suited to gas/oil/electric heat. But I never see any mention of what I might need for a steam or hot water radiator system.

What should I look for? How will I know if I am getting the best and most efficient operation from my system? (The current thermostat fires the boiler at times for only a few minutes each, so repeatedly fires and then shuts down within an hour. This seems very energy inefficient when doing something like bringing water to a boil.)

Any help our direction would be much appreciated. Thank you.
