Temp. overshoot

I have a 8 year old gas WM boiler operating our under-joist radiant and DHW with high limit at 165F for the boiler.
Everything is fine right up until the flame goes off when the temp/pressure gauge shows temp. hits 165F. However, temp gauge continues to shoot up as high as 200F and normally only starts to decline at around 190-195. The circulator is working. Why such a big 30F disparity?
If the gauge were broken, it wouldn't have shown the right cut-off at 165F. Or if the aquastat were broken, the guage wouldn't have shown the correct cut-off at 165F. I don't understand and am worried about the IPEX tube which states it can only handle 179F max.
Any idea?
