If your boiler runs out of water, the boiler can burn and in some situations blow apart violently. For that reason a low water cutoff is a good control to have so the boiler will not be endangered by losing too much water.

A hot water boiler will usually warn by making loud sounds in the pipes long before that happens in a system where the boiler is below the piping. A boiler that has all the pipes below the boiler should have a low water cutoff to stop the burner.

A steam boiler already has a low water cutoff, so that should be cleaned yearly and tested monthly.
