how did the water get in there in the first place? How did they get the air out then or the numeous times it must have been serviced in that time?

You've been given references to drawings of systems and pictures of where the parts should be to get air out including the methods. Either valves are in the circuits to close so you can force new water against them and out a drain valve nearby, or there was an opening at the topmost circuit. You might be missing them. It might take a visit from an experienced plumber to find them and point out how to use them. Writing descriptions over the internet is not the best vocational instructional method.
