As the SX-180 is a gas boiler, it ordinarily does not have the control to keep the boiler warm to make hot water. The high limit is a safety control that prevents the water from exceeding the limit and its contacts are not ordinarily or properly wired to keep a low temperature. It is most likely preventing the water from getting to hot now at 190F.

It might be that one of the zone valve's contacts is sticking or there is another wire pair that is shorted, keeping your boiler firing.
