bleeding radiators and preventing mineral deposit

Hello. I'm new to this board, and new to my very old home. We had a tune up and a new coil put in. Howeve,r i want to bleed the radiators, but have seen reference to a "key?" I don't see where this would be. I see a rather big knob on the side of the radiator that looks rather unmovable, or the knob that moves to open the valve. so how exactly do i start doing this?

also, we have high iron content in our water. is there something that can be added to the water in the system that will clean it out? ( i was thinking on how one adds vinegar to clean out a rusty coffee maker)

any other advice in preparing for winter would be helpful. i already learned from here about a digital thermoter not being so hot for a 1 pipe system. hope to be learning more.
