Sometimes its not the easiest thing to do. There are a couple things you can try. 1) try some penetrating lubricant (i.e wd 40 or something similar) Apply the wd 40 and tap the hex nut w/ a hammer to get it worked in a little. Try to get the w-d worked in by turning back and forth on the nut to try to get it looser as you go. Make sure you're using a decent pipe wrench and not a pair of pliers or something like that. As a matter of reference, I normally have to use an 18" pipe wrench MINIMUM to get those nuts turning if I'm lucky. On most occasions though, I need a 24" pipe wrench to get them to go and sometimes they fight me on every last turn. If it doesn't turn, you'll have to cut out the old valve with a sawzall and replace it completely. Something ( unless you are extremely handy) that should be left to the professionals. If you do happen to get it dis-connected bear in mind that if the valve is really old it probably won't shut off. That means if the heat is on and the valve is not shut you'll blow steam all over the kitchen. Be careful and good luck
