Your digital theromostat may work just fine on your hot water system, which is a more easily controlled for zoning & setback. However, remember that these one pipe steam systems were designed to run at a constant 70 degrees in zero degree weather. I agree with the fact, that you'll probably end up with an increase in water hammer. One of the biggest thing you can do as far as energy efficiency, is to make sure that your steam main(s) are insulated.
