I believe that it is losing about 2 inches a week, but I don't see any water around the boiler, is it leaking inside and being burned off?

I also checked the temperature of the hot water coming out of the bathroon faucet with a candy cooking thermometer and it was ~100degF. Can I increase this temp by adjusting the Aquastat on the external tankless hot water tank?
