While an aquastat might be accurate in operation, the characteristics of the boiler water flow due to the system opening and closing zone valves might not indicate the same settings on the gauge.

The dististurbing part of your post is the water spraying at 200 psig; one must ask why the boiler has such an unusual gauge that reads that high. If you meant 200F, that is OK; but 200 psig is another problem. In any case, spraying water indicates an inadequate expansion tank. Have it looked to by a qualified repairman emmediately.
