Lochinvar boiler running on single stage

I have the Lochinvar 300K btu boiler which is going to be repiped with the addition of a buffer tank after the holidays. I had shut off the second stage (high fire burner) on the boiler last month (So it is currently putting out about 140K btu).
This morning, it was -6 F outside (not sure what the design temp is for northern CT, but this must be close).
The boiler operating temp is set at 180, and the boiler water outlet temp was stable at about 165 with 2 fan coils running (out of 3). The house was at temp, and our DHW is plentiful. Does this just prove that our boiler can comfortably run on single stage? Are there any issues I should look out for (to know when boiler is not keeping up)?
How would I tell if internal condensation were occurring?
