The water might go over the high limit setting under some circumstances of flow change, such as in systems with several zones. The water temperature at the high limit probe can be cooler than water through other parts of the boiler. As there is some worry, you can add a strap-on second high limit on the outlet pipe to prevent the occasion if you know the high limit in the existing control is accurate and not worthwhile changing a good limit for a good limit.
