You should be able to get another gauge of the same probe length as the Vaillant probe from plumbing/heating suppliers that carry gauges for other brands. As you don't know if you have a dangerous condition now, shut the boiler down and drain the system as you can to be able to remove the gauge to bring it as an example to be replaced.

When you know the system pressure from the new gauge after refilling it, you will know if your pressure reducing valve to the system has failed and you have an excessive pressure or not.

The pressure relief gauge is probably working at the proper pressure to stop you from having an exploded boiler. It seems your temperature is too high, as the relief valve also relieves steam, so you have a problem there with the setting or failure of the high limit.
