PEX Tubing

Couple of questions regarding PEX tubing.... First, I would like to install this under my kitchen floor, I have
access to the underside of the joist space so what size tubing would you recommend for this installation?
Secondly, I read an earlier post you had ade regarding use of PEX tubing for retrofitting pipes in existing walls, If I do this,
Do I eed to limit my system temperature to 165 degrees. Most of the tubing I have seen list this as a maximum allowable temp.
Thirdly, I have seen PEX tubing advertised having a special oxygen barrier. Do I need to use this with my system,
I have a newer valliant boiler with copper piping. The system is a closed loop hot water system. It does not supply domestic
water. If I do use PEX tubing to retrofit pipe, do I need to Insulate the pipe in the walls? Thanks
