The only reason you would need the boiler boiled out is if there had been continual leaks to have fresh water replace the water supposedly sealed in the system. Hardness would have collected inside the boiler from large quantities of hard water. In other words, this is an admission that leaks had not been repaired in all this time. Talk to Vaillant in Europe to see if they recommend a boilout, as it may damage seals, etc.

Vaillant made a valiant sales effort in the US. They do not list the North American continent as one of their locations in their web site:

Keeping the thermostat at 72F to keep warm has no known relation to boiler operation, it is a function of radiation, building structure, and personal preference.
