I'd start with what HK said, the sporadic reenactment of the noise is when it cools back down. Listen for it to be one set on heat up and one set of noises per cooling cycle. Make sure your pressure is down as low as you can. The new one might be set much higher, with higher temperature. Also if the boiler is much larger it might be having more, shorter cycles of heat/cool. If it is running wetter you may be getting extra condensate in that piping for dripping. Make sure water line is steady and doesn't drop a lot through the cycle.
