water should not be bouncing around in boiler.
boiler manufacturers REQUIRE scimming of newly installed boilers. they should have left you the instruction manual, you'll find the manufacturers scimming procedures in there.
air vents may now have crap in them from the boiler replacement, banging on pipes, dislodging of rust etc.
as jtown said, make sure the pressure is down.usually a cut in of 1/2 pound with a 1 pound differential is fine.
