Are you saying that the pipe in the pantry has a valve on it still and when you open that you get a bucket of water? Skimming is for new boilers or any others where the water line in the glass goes up and down while you watch it (1-2sec). Make sure your pressure is down to a minimum like 1 or 2 psi, your gauge might go down to 3 so there. Banging is liquid being thrown around. If it worked before the new boiler it may need a good skimming if water is bouncing and they might have screwed up the near boiler piping. As long as your pantry pipe is shut off and you don't get steam, it should drain all water back to the boiler. The best way to remove it is to unthread the pipe with two big pipe wrenches til you get to a fitting below the floor and you screw a pipe plug or cap in/on. It would be cheaper to hire a handy person that has the tools. Check the installation manual for your boiler for what the piping should look like. The installer shouldn't be putting in boilers without checking the whole system.
