There's an article on Kirsner's site entitled "Bangin' In the Boiler Room" that may help. It's specifically about boilers and feedwater piping, but I'll bet the principles at work are the same in your problem. The condition & location of the check valve may have a lot to do with the water hammer. Also, check valves are usually oversized. There's a section in Crane's "Techical Paper No. 410 Flow Of Fluids" on this. The oversizing of check valves is the leading cause of them wearing out long before their time, causing all kinds of problems - like yours.
