: Is a Flue gas temperature of 900 Deg F from the boiler to the economizer a good assumption?

I just pulled out some calculations done a few years back on the gas inlet temperature to an economizer of a large Radiant Boiler and it was approximately 899 Degrees. However, I also have an example of a coal fired boiler with an economizer inlet temperature of 815 DegF.

You should try to get a hold of a copy of STEAM ITS GENERATION AND USE published by Babcock & Wilcox. There is an example coal fired boiler performance calculations in chapter 21 that may be exactly what you need.
