I learned in tech school, but seem to recall coming across brouchures from some of the major manufacturers covering these tasks.

Actaully, packing valves isn't rocket science. You pull the old packing out and stick in new rings, alternating the cut sides. There are a lot of products on the market, some making rather grandiose claims. IMHO, regular teflon rope packing is best. Make sure it's rated to handle the operating temp of the valve.

I'd think you could find information on the web using any search engine.
