Tankless hot water coil

We have tankless coil installed in our oil burner to
produce hot water.
Whe we take shower we always experience the same problem - the water will be hot when you just start it, then in a minute it will became cold. And if you patient enough in a few minutes it will go hot again and will stay that way long enough to finish the shower.
Does anybody knows what the problem is ?
One guy told me that my coil is too old (it is 11 years old) and have to be replaced. Can that be a reason? Replacement would cost me about $750. Is there any other solution ? Like cleaning the coil ?
Another guy told me that my thermostat should be replaced and is the cause of trouble. Any idea about that ?
Any wadvise would be really helpfull.
